From a rack of lamb to trail mix snacks, nuts add crunch,
flavor and healthfulness.
One of the easiest ways to vary basic recipes is to add nuts,
even sprinkling nuts on a finished dish can add eye appeal
and increased perceived value.
Nuts also deliver unexpected changes in texture. For example,
stir caramelized nuts into a traditionally smooth chocolate
mousse; coat a tender rack of lamb with mustard and hazelnuts
and or bake delicate catfish in a crunchy coat of pecans.
The contrasting textures and flavors add a new dimension to
the recipe.
"Nuts add oomph to the trail mix we offer to the students
(3rd-6th grades) before their annual standardized testing,"
says Marilyn O'Mahony, cafeteria manager at Spring Valley
Elementary School in Dallas. "They give kids a 'brain boost,'"
she adds. This simple, yet satisfying, snack is served at
test time with apples and oranges or for breakfast alongside
peanut butter and jelly toast or yogurt.
Nuts are equally welcome in everyday meals or gourmet fare
according to Executive Chef Pascal Beaute, of the Kennedy
Space Center in Florida. Whether catering high-profile events
(which may feature luscious escargot in a savory nut butter)
or serving employees hot pasta lunches (tossed with sun-dried
tomato pesto), nuts are integral parts of some of his favorite
recipes.
The key is to keep them fresh. "Nuts are high in fat, and
like liquid fats, they can easily become rancid if exposed
to light and heat. To avoid this, keep nuts stored in airtight
containers away from light and heat sources," advises Labensky.
For even longer shelf life and freshness, freeze nuts.
